Mexican Quinoa Salad
What You’ll Need:
1 1/2 cups cooked quinoa
1 cup chopped red cabbage
1 red belle pepper, diced
1 green belle pepper, diced
1/2 red onion, diced
2 roma tomatoes, diced
1/2 can black beans, drained and rinsed
1/2 cup corn
1/4 cup chopped fresh cilantro
1/2 tbsp minced garlic
salt and pepper to taste
Dressing:
1 tsp chipotle chili powder
1 tbsp olive oil
juice of 2 limes
2 tsp honey
How To:
Add all of the chopped vegetables, quinoa, corn, black beans, cilantro, garlic, salt and pepper to a large bowl.
in a separate bowl, mix up the dressing ingredients until well combined and pour over the salad.
Mix everything together and enjoy plain or over some chopped romaine
Note:
For more protein, add grilled chicken or shrimp!
