Mexican Quinoa Salad

What You’ll Need:

  • 1 1/2 cups cooked quinoa

  • 1 cup chopped red cabbage

  • 1 red belle pepper, diced

  • 1 green belle pepper, diced

  • 1/2 red onion, diced

  • 2 roma tomatoes, diced

  • 1/2 can black beans, drained and rinsed

  • 1/2 cup corn

  • 1/4 cup chopped fresh cilantro

  • 1/2 tbsp minced garlic

  • salt and pepper to taste

Dressing:

  • 1 tsp chipotle chili powder

  • 1 tbsp olive oil

  • juice of 2 limes

  • 2 tsp honey

How To:

  1. Add all of the chopped vegetables, quinoa, corn, black beans, cilantro, garlic, salt and pepper to a large bowl.

  2. in a separate bowl, mix up the dressing ingredients until well combined and pour over the salad.

  3. Mix everything together and enjoy plain or over some chopped romaine

Note:

For more protein, add grilled chicken or shrimp!
