Greek Chickpea Salad
What You’ll Need:
1 green belle pepper
1 red belle pepper
2 roma tomatoes
1 cucumber
1 red onion
1/4 cup katamala olives
1 cup crumbled feta cheese
1 can of chickpeas (drained and rinsed)
fresh mint leaves (optional)
Dressing:
juice of 1 lemon
3 tbsp olive oil
2 tsp garlic powder
1 tsp oregano
salt and pepper to taste
How To:
Dice all of the fresh veggies and olives and add to a bowl with the chickpeas and feta cheese
In a separate bowl, mix the dressing ingredients.
Pour the dressing over the diced veggies and mix everything together.
Enjoy plain, or over a bed of greens.
