Greek Chickpea Salad

What You’ll Need:

  • 1 green belle pepper

  • 1 red belle pepper

  • 2 roma tomatoes

  • 1 cucumber

  • 1 red onion

  • 1/4 cup katamala olives

  • 1 cup crumbled feta cheese

  • 1 can of chickpeas (drained and rinsed)

  • fresh mint leaves (optional)

Dressing:

  • juice of 1 lemon

  • 3 tbsp olive oil

  • 2 tsp garlic powder

  • 1 tsp oregano

  • salt and pepper to taste

How To:

  1. Dice all of the fresh veggies and olives and add to a bowl with the chickpeas and feta cheese

  2. In a separate bowl, mix the dressing ingredients.

  3. Pour the dressing over the diced veggies and mix everything together.

  4. Enjoy plain, or over a bed of greens.
