Healthy Breakfast Casserole

This is one of my favorite recipes to make sure I have on hand for busy weeks! It can be eaten immediately, stored in the fridge and then reheated or frozen for later use.

R E C I P E

Spinach, Sweet Potato, Sausage Breakfast Casserole

What You’ll Need:

• 15 Eggs
• 1/2 tsp each of Salt and Pepper
• 1/2 Cup Milk (optional but recommended)
• 2 Small Cloves of Fresh Garlic, Minced
• 1 1/2 Cups of Cooked Breakfast Sausage
• 1 1/2 Cups of Fresh Spinach, Roughly Chopped
• 1 Small Sweet Potato (Cubed and Roasted beforehand)
• 3/4 Cup of Crumbled Feta Cheese
• 1/4 Cup of Butter or Coconut Oil to grease your baking dish

How To:

• Preheat oven to 400º F
• In a bowl, combine the eggs, milk, salt and pepper. Whisk until fully mixed
• Grease your glass baking dish with the butter or coconut oil.
• Pour the egg mixture into the baking dish. Then add the cooked breakfast sausage, cooked sweet potatoes and chopped spinach.
• Sprinkle the minced garlic and feta cheese on top.
• Gently press down the "toppings" with a fork to make sure everything is lightly submerged in the egg mixture.
• Bake at 400ºF for 20 minutes, or until the middle is firm.

• For serving:
Enjoy immediately, or allow to cool, cut into single portions and store in the fridge for up to a week.

This can also be frozen for later use!

This recipe makes roughly 6 large servings.
