FRESH HOMEMADE SALSA

Like I mentioned on my instagram post, I’ve never been a a huge fan of Mexican food. Jesse and I wanted to try something different from the same old Sunday lunch after church, so we went to the most DELISH Mexican restaurant a couple weeks ago. It was seriously so good! We’ll be going back for sure.
I came home inspired to try out making some of my own Mexican food. I only got as far as fresh salsa, but it’s a start! I can’t take complete credit for this recipe. I used the help of the Vitamix “Simply Blending” cookbook with some of my own tweaks, and added a few things as well!
Below is the recipe, hope you enjoy!

INGREDIENTS:
6 Roma Tomatoes, rough chopped
1-2 Jalapeños rough chopped, seeds removed
1/2 White Onion, rough chopped
1/2 Cucumber, rough chopped
1/4 cup Fresh Cilantro
Juice of one Lime
1/4 tsp Garlic Powder
1/2 tsp Salt
1/4 tsp Pepper
DIRECTIONS:
Leave half of the tomatoes to the side. Add everything else to your blender and pulse until it is mostly mixed. Add the rest of the tomatoes and pulse until everything is throughly mixed. Serve with your favorite tortilla chips (mine are the Kirkland brand from Costco!) Enjoy!
