BBQ Chicken Lunch Bowls

What You’ll Need

Chicken:

  • 1 lb boneless skinless chicken breast

  • 1 cup of your favorite BBQ sauce, I use this brand! plus more for serving

  • 1 tsp Cayenne pepper (optional)

  • 1/2 cup chicken broth (or water)

Slaw:

  • 4 cups broccoli slaw

  • 2 tsp apple cider vinegar

  • 1 tsp minced garlic

  • 2 tbsp mayo

  • 1 tbsp raw honey

  • juice of 1 lemon

  • salt and pepper to taste

Sweet Potatoes:

  • 2 medium sweet potatoes

  • salt, pepper and garlic powder to taste

  • 2 tsp smoked paprika

  • pinch of cayenne pepper (optional)

  • olive oil

How To:

  1. Place the chicken breast in your crockpot along with the bbq sauce, optional cayenne pepper and chicken broth (or water). Cook on high for 2 hours or low for 4 hours.

  2. Preheat oven to 400ºF

  3. Wash, peel and cube sweet potatoes and add to a baking sheet with the olive oil, salt, pepper, garlic powder, smoked paprika and optional cayenne pepper. Toss to coat and bake for 20 - 25 minutes

  4. In a bowl, combine the broccoli slaw, mayo, lemon juice, mayo, garlic, apple cider vinegar and slat and pepper. Mix and set aside for serving. (TIP: mix this several hours ahead of time, or the night before. This will allow the slaw to soften and absorb the flavors from the other ingredients!)

  5. When you’re ready to serve (or put the bowls together if meal prepping), remove the chicken from the crockpot and shred with two forks. (add more bbq sauce to the chicken if needed!)

  6. Serve the chicken with a portion of slaw and sweet potatoes and additional bbq sauce if desired!
