Bruschetta Chicken
What You’ll Need
1 lb boneless skinless chicken breast
2 small roma tomatoes
1/2 red onion
1 tsp minced garlic (or 2 cloves minced/grated)
fresh or dried basil
1 tbsp extra virgin olive oil
balsamic glaze (homemade or store bought)
mozzarella (optional)
salt and pepper to taste
How To:
Preheat your oven to 425ºF
Heat the olive oil in a skillet on medium high heat
Season the chicken on both sides with salt and pepper
Sear the chicken on both sides for 2 - 3 minutes, then remove from the pan and set in a greased baking dish
While the chicken is searing, dice the roma tomatoes and onion
After removing the chicken, add the tomatoes and onion to the pan and sauté for 1 -2 minutes
Add the tomatoes and onions to the chicken, then top with balsamic glaze and mozzarella
Bake for 15-20 minutes or until the cheese is melted and the chicken reaches 165ºF internally
Top with fresh basil and serve
