Bruschetta Chicken

What You’ll Need

  • 1 lb boneless skinless chicken breast

  • 2 small roma tomatoes

  • 1/2 red onion

  • 1 tsp minced garlic (or 2 cloves minced/grated)

  • fresh or dried basil

  • 1 tbsp extra virgin olive oil

  • balsamic glaze (homemade or store bought)

  • mozzarella (optional)

  • salt and pepper to taste

How To:

  1. Preheat your oven to 425ºF

  2. Heat the olive oil in a skillet on medium high heat

  3. Season the chicken on both sides with salt and pepper

  4. Sear the chicken on both sides for 2 - 3 minutes, then remove from the pan and set in a greased baking dish

  5. While the chicken is searing, dice the roma tomatoes and onion

  6. After removing the chicken, add the tomatoes and onion to the pan and sauté for 1 -2 minutes

  7. Add the tomatoes and onions to the chicken, then top with balsamic glaze and mozzarella

  8. Bake for 15-20 minutes or until the cheese is melted and the chicken reaches 165ºF internally

  9. Top with fresh basil and serve
