Sesame Cilantro Chicken

What You’ll Need

  • i lb boneless skinless chicken breast

  • Olive oil

  • Salt and pepper

  • Scallions

  • White and black sesame seeds (optional)

  • 1/4 cup fresh cilantro

  • orange and or lime wedges for serving

Sauce:

  • 1/4 cup low sodium Tamari or Coconut Aminos

  • 4 tbsp sesame oil

  • 1/2 tbsp rice vinegar

  • 2 tbsp honey

  • 1 tsp fresh or dried ginger

  • 1 tsp minced garlic

  • juice of 1 orange

  • 1 tsp arrowroot starch

  • salt and pepper to taste

How To:

  1. Season the chicken breast on both sides with salt and pepper

  2. Heat a pan on medium heat and add the olive oil

  3. Sear the chicken on both sides for 3-4 minutes or until the chicken is fully cooked (165ºF internally). Remove from heat and set aside

  4. While the chicken is cooking, make the sauce - add all ingredients to a small bowl and whisk until combined

  5. Add the sauce mixture to a small pan and bring to a low simmer, stirring occasionally until it thickens. Taste the sauce - if you like it sweeter, add more honey and stir to combine with the rest of the sauce

  6. Coat the fully cooked chicken in the finished sauce and serve topped with the cilantro, scallions, black and white sesame seeds and optional citrus wedges.

  7. Serve with roasted vegetables (broccoli or green beans) and rice or roasted sweet potatoes
